Joan and Rob Reen bought back Ynyshir Hall in 2011 after the collapse of von Essen hotels who had purchased the hotel in 2006. Joan and Rob had always stayed on managing the hotel but when the hotel group collapsed the couple knew they would buy it back immediately. Since then the hotel has gone from strength to strength. Young Welsh chef Paul Croasdale achieved 3 AA Rosettes this year, followed by the hotel being awarded the global 100 hotels in the Fodor’s 100 Hotel Awards. Now, Visit Wales have again awarded Ynyshir Hall a Gold Standard Award confirmed through rigorous mystery customer testing. The Gold Award rewards outstanding quality, exceptional comfort and hospitality in the serviced sector in Wales.

Ynyshir Hall Hotel will soon grow from 8 bedrooms to 10 bedrooms and continues to be the home of BBC show Springwatch, further putting Mid Wales on the map. A Foodie Paradise in the Secret Heart of Wales - Showcasing Welsh Produce at its best with Head Chef Paul Croasdale



Ynyshir Hall has always been a foodie paradise under owners Joan & Rob Reen. Both have worked with some of the country’s finest chefs and the hotel has previously had a Michelin star for 11 years. Today under young chef Paul Croasdale the hotel was recently awarded three AA Rosettes. Paul’s Welsh modern cuisine style is prepared using local ingredients including some locally foraged items and foods from the hotel’s own herb & vegetable garden. Paul is a firm fan of Welsh produce which over the years has seen a surge in popularity.

Ynyshir Hall is blessed with an abundance of wonderful fresh local ingredients. Ynyshir Hall’s succulent seafood comes from Cardigan Bay — with lobsters, crabs and shrimp landed at Aberystwyth and Borth. And there is exceptional wild salmon and sewin in the local rivers.
Venison and wild game are in abundance, Ynyshir Hall has tender-sweet Welsh lamb along with free-range chicken and Welsh Black beef which is second to none. Pork is organic and bacon is hand-cut for breakfast with sausages prepared to the hotel’s own recipe.

The kitchen garden produces wonderful fruit, vegetables, herbs and salads. Both Paul & Joan also collect wild foods such as mushrooms, samphire, wood sorrel and wild garlic — all absolutely delicious thanks to the purity of the local soil, water and air.

Or why not start with 50˚C Olive Oil Poached Tuna Loin served with Pickled Tomato & Salsa Verde or the Dovey Partridge served with Sprouts, Chestnuts and burnt Leek.

Mains include 52 degree Lamb served with Clams & Sea Vegetables. Butter Poached Borth Lobster Tail is served with Hand Rolled Macaroni & Jersey Royals or diners can experience Loin of Rhug Estate Organic Pork served with Yogurt, Apple, Shrimp Noisette. Paul Croasdale was previously at The Atlantic Hotel in Jersey who held a Michelin Star & 4 AA Rosettes and prior to this spent time at The Box Tree at Ilkley, and at The Devonshire Arms amongst others. Guests are encouraged to interact with produce at Ynyshir Hall through several packages hosted by Paul.

Foraging and Fine Food Break
Ynyshir Hall have several foragers within their team who are a font of knowledge about the wonderful variety of edible plants, mushrooms and wild berries found in abundance in this area.
Arrive by 2pm, meet your forager and spend a few hours exploring the area and searching out edible delicacies.
Chef will then prepare an eight course taste menu, including a variety of seasonal wild foods, some of which you will have collected that very afternoon! Nothing could be better!
The next morning, after a leisurely breakfast, spend time with Chef who will share tips of how best to use the wild foods you’ve collected. From £490 per night for two people sharing a double room; includes accommodation, breakfast, eight course taste menu, Chef’s Demonstration and foraging walk.
